Apple pork chops

Ingredients — Apple Pork Chops
3–4 bone-in pork chops
2 tbsp olive oil
2 medium apples, sliced
1 small red onion
¾ cup chicken stock
1 tsp Dijon mustard
1 tbsp fresh sage
1½ tsp fresh rosemary
½ tsp fresh thyme
½ tsp kosher salt
¼ tsp black pepper
How to Make Apple Pork Chops
Season the Pork Chops
Season the bone-in pork chops generously with kosher salt and black pepper on both sides.
Sear the Pork Chops
Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–5 minutes per side, until nicely browned. Remove the pork chops from the skillet and set aside.
Sauté the Apples and Onions
Add the sliced apples and red onion to the same skillet. Sauté them with the fresh sage, rosemary, and thyme until they begin to soften and become fragrant.
Make the Sauce
Stir the Dijon mustard into the chicken stock. Pour the mixture into the skillet with the apples, onions, and herbs. Stir well, scraping up any flavorful browned bits from the bottom of the pan.
Return the Pork Chops
Place the seared pork chops back into the skillet. Allow them to simmer in the sauce until the pork is cooked through and the sauce has reduced.
Serve
Serve the pork chops warm with the sautéed apples and onions, spooning the flavorful sauce over the top. The combination of savory pork, sweet apples, and fresh herbs makes this an easy and satisfying family dinner.
