PERFECT POT ROAST

Ingredients — Perfect Pot Roast
3 lbs beef chuck roast
4 oz bacon
1 yellow onion, diced
8 oz mushrooms
3 cloves garlic
1 tbsp tomato paste
1½ cups beef broth
1 bottle dry red wine
12 oz carrots
1 lb baby potatoes
1 tsp thyme
Salt & pepper, to taste
How to Make Perfect Pot Roast
Cook the Bacon
Cook the bacon in a large pot or Dutch oven until crispy. Remove the bacon and set it aside, leaving the bacon fat in the pot.
Season and Sear the Roast
Season the beef chuck roast generously with salt and pepper. Place the roast in the pot and sear it in the bacon fat until browned on all sides.
Sauté the Vegetables
Remove the roast from the pot. Add the diced onion and mushrooms and sauté until they begin to soften. Add the garlic and cook briefly.
Build the Sauce
Stir in the tomato paste and thyme. Add the beef broth, dry red wine, and cooked bacon. Mix everything together, scraping up any browned bits from the bottom of the pot.
Braise the Roast
Return the seared roast to the pot. Cover and braise for 2 hours, allowing the beef to slowly cook and become tender.
Add the Carrots and Potatoes
Add the carrots and baby potatoes to the pot. Continue cooking uncovered until the roast is tender and the vegetables are fully cooked.
Serve
