Ingredients Steak Fajitas

  • 2–3 lbs skirt, flank, sirloin, or tri-tip steak

  • 1 green bell pepper

  • 1 red bell pepper

  • 1 orange bell pepper

  • 1 white onion

  • Soft flour tortillas

Marinade:

  • Avocado oil

  • 2 limes

  • 2 tsp salt

  • 1 tsp pepper

  • 1 tsp paprika

  • 1 tsp chili powder

  • Cilantro

How to Make Steak Fajitas

Marinate the Steak

The day before cooking, place your steak into a container with a lid.

In a bowl, mix together :-

  • 1 cup olive oil

  • Juice of 2 limes

  • 2 teaspoons salt

  • 1 teaspoon pepper

  • 1 teaspoon paprika

  • 1 teaspoon chili powder

  • Chopped cilantro

Pour the marinade over the steak. Make sure the steak is well coated. If it isn't fully covered, add another ¼ cup of oil along with a little additional seasoning.

Cover the container and refrigerate overnight.

Prepare the Vegetables

On the day you're cooking, cut the green, red, and orange bell peppers into strips wide enough that they won't fall through the grill grates. You'll cut them into smaller pieces after grilling. Slice the white onion into approximately ½-inch slices.

Grill the Steak and Vegetables

Remove the steak from the marinade and place it on a hot grill.

At the same time, brush both sides of the peppers and onions with avocado oil and place them on the grill. When the peppers and onions become soft, remove them from the grill and slice them into smaller pieces for the fajitas. Cook the steak until it reaches your desired internal temperature.

Warm the Tortillas

While the steak is resting, place the soft flour tortillas on the grill for a short time to warm them.

Assemble Your Fajitas

Slice the rested steak into strips. Fill each warm flour tortilla with grilled steak, peppers, and onions. Serve immediately and enjoy!

Tips for Delicious Steak Fajitas

Choosing the right cut of steak can make a big difference. Skirt steak, flank steak, sirloin, and tri-tip can all work well for fajitas. Marinating the steak overnight gives the lime, spices, and herbs plenty of time to add flavor. For tender fajitas, allow the steak to rest before slicing, then cut it against the grain.
